Smart Smoothies




I love adding smoothies to our menu to get in all that veggie and fruit goodness.

In my Vitamix blender I added (measurements are approximate)

1 cup fresh spinach
1 cup carrots
1 banana
1 cup mixed frozen tropical fruit
1/2 cup frozen cranberries
3/4 cup orange juice

I blended until completely smooth, adding a few ice cubes to make it thicker.

It turned an absolutely yucky colour but smelled and tasted delicious and everyone drank it up.

Chicken Taco Scoops

Today's recipe is so easy it almost doesn't qualify as a recipe!

Regular tacos break the first time you bite into them. I serve the filling separate with the corn chips for scooping up (along with a spoon for the children who will not mix food). A lot lesss frustrating than cracking tacos.

Chicken Taco Scoops

Left over cooked chicken
Taco spice
Rice
Can of Beans
Salsa
Enough water or chicken stock to coat rice

I stir fry the above ingredients together, adding enough water or stock to form a "gravy".

Top with grated cheese, I like a blend of mozzarella and cheddar. Serve with corn chips to scoop up the taco filling.
